My assignment for health class this upcoming week was to cook something using a whole grain. I chose the grain quinoa and this is the product...It is a quinoa stuffed acorn squash with onions, walnuts, figs, goat cheese, and arugula. I can see this being cooked again in the near future..."October's poplars are flaming torches lighting the way to winter." ~ Nova Bair
